How was everyone’s weekend? The family and I went with some friends to Lake Okaboji. I was ready for a relaxing weekend of lounging, boating, and jet skiing. While we had fun, relaxing is not an accurate way to describe it. Apparently 8 month olds don’t like relaxing. And THIS one really isn’t interested in sleeping anywhere but HER bed. Wonder where she gets that sassy-ness from?
Good thing she is cute.
We ended up leaving a day early just because we were all so exhausted with the lack of sleep! Luckily we were able to get some fun in at the waterpark.
Do you have any tips for me on getting my kid to sleep anywhere other than a crib? I’m hoping this is just a phase and she will adapt better the older she get. Oy!
Anyway, despite my lack of sleep I was able to prepare this SUPER tasty, SUPER healthy dish that I know you are going to LOVE.
I’m going to be honest I was NOT a fan of salmon (or any fish for that matter), but Tyler loves it. I decided since I make him eat so much random stuff that he doesn’t like that I should probably try something that he likes. Especially because its so healthy.
My biggest beef (ha!) with salmon though is that it smells so fishy which disgusts me.
Enter my friend who tells me that I need to try some salmon from a local fish market in West Des Moines, Waterfront Seafood. Apparently they fly fresh salmon in every few days and according to her, “It’s always amazing.”
I must say she was right and if you are local to the Des Moines area you should get your buns over there and buy some today (they have a location in Ankeny as well).
Cedar Plank Grilled Salmon
The MOST IMPORTANT part about grilling your salmon on cedar planks is to soak them for a REALLY long time. Like overnight and all day. Just fill the sink or a tub with water and throw those puppies in there.
Wood will catch on fire, I’ve seen it happen.
Yep I caught my cedar planks on fire. Coincidentally it was the SECOND time I cooked this dish, not the first time. Oh and did I mention that the baby started screaming her brains out right about the time this happened? Yea it was a glorious evening that ended with a FIRE EXTINGUISHER.
Morale of the damn story? SOAK THE CEDAR PLANKS FOR A RIDICULOUS AMOUNT OF TIME.
When its time to actually prep dinner just throw the salmon (skin side down) on the planks.
Drizzle just a touch of olive on the fish and then season.
I recently experimented with the Potlatch seasoning from Williams Sonoma and holy crap was it AMAZING. Its a really basic seasoning (salt, pepper, red pepper flakes, garlic, and a few other randoms) and it was delicious.
Next throw the planks on the grill over medium low heat. Some people have suggested having the burner off that the planks actually sit on and just have the burners next to it on. I’ve done it both ways and it works either way as long as you soaked the planks for a really long time.
Grill the salmon for 15-20 minutes.
You will know that it is done when the fish starts flaking off. After about 15 minutes just poke it with a fork and see if its flaky yet.
No need to flip this over. Its seriously ridiculously easy….as long as you don’t set your planks on fire.
Serve this with some sweet potato fries, or some grilled mushrooms, zucchini, and onion. I’m a big fan of a grilling basket to put on the grill with my meat. You can really throw about anything in there.
Special note: We fed this to Piper and she was OBSESSED with it. So it is officially, kid approved!
